Chilli Mussels Medium

  • 500g Mussels scrubbed and
    DE bearded
    1 tablespoon of olive oil
    1 garlic clove, crushed
    1 small onion, finely chopped
    1 cm piece of ginger, grated
    1 cup of coconut milk
    Fresh coriander for garnish



Large – Serves 6

  • 1 ½ kg Mussels scrubbed and
    DE bearded
    3 tablespoon of olive oil
    3 garlic cloves, crushed
    1 large onion, finely chopped
    3 cm piece of ginger, grated
    3 cups of coconut milk
    Fresh coriander for garnish


Cooking Method

Discard any mussels with broken shells and any that refuse to close when tapped with a knife. Heat the ghee in a large heavy based frying pan. Add the onion and cook over a low heat, stirring occasionally, for 10 minutes or until golden. Add the ginger and garlic cook stirring constantly, for 2 minutes. Add Spice Blendz Chilli Mussels spice mix and cook, stirring constantly, for a further 2 minutes. Stir in the coconut milk and bring to the boil. Add the mussels, cover and cook for 5 minutes or until the mussels have opened. Discard any mussels that remain closed. Transfer the mussels, with the coconut sauce, to a large warmed serving dish. Serve Sprinkle with chopped coriander and serve immediately.
