Mango Chicken Mild

    • 500g Chicken pieces or boneless chicken, diced
      1 onion, chopped
      1/2  fresh Mango sliced or 1 small can of mango
    • 1/4  capsicum, sliced
    • 1/2 cup chicken stock
    • 150 ml can of coconut milk

  • 11/2 kg Chicken pieces or boneless chicken, diced
    2 large onion chopped
    2 fresh Mangos sliced or 1 large can of mango
  • 1 large capsicum, sliced
  • 11/2 cups chicken stock
  • 310 ml can of coconut milk


Cooking Method

Heat a large saucepan over medium high heat with 1 tablespoon of oil. Brown chicken in batches until golden. Set aside. Add the onion and capsicum to the pan and cook for 6 – 8 minutes.

Stir in Spice Blendz Mango Chicken spice mix and cook a further 1 minute before adding chicken stock. Bring to a simmer before returning chicken to pan. Cover tightly and simmer over low heat for 40 minutes or, until chicken is nearly cooked. Add coconut milk and mango and season to taste. Return pan to a simmer for 10 minutes.

Serving Suggestion – With rice, pappadams  and mango chutney.
