Massaman Thai Chicken Curry
Contentent: Coriander, ginger, garlic, chilli, bayleaf, lemongrass, cumin, turmeric, pepper & cardamom.
In a heavy based pot combine
500 grams chicken thigh fillets (Brown the chicken.)
1 cloves garlic crushed
2 cm piece ginger grated and

Cook over a low heat until the curry paste is fragrant. Add
1 cup stock Partially cover, keep the heat low. Stir occasionally, add water if needed during the cooking time to keep ingredients just covered. Simmer until the chicken is almost tender. Add
200 ml coconut milk
2 large potatoes peeled and cubed and
2 tablespoons fish sauce. Cook for a further 30 minutes, or until chicken is very tender.
Serving Suggestion – Garnish with roasted peanuts
