  • 500g of boneless lamb cubed
    1 red onion, cut into wedges
    2-3 cups of cooked and chilled basmati rice
    125ml of beef or vegetable stock
    1 tablespoon of pine nuts, toasted
    1 tablespoon of slivered almonds, toasted
    ¼ cup each of currants and dried apricots chopped
    ¼ cup of fresh mint and coriander
    1 lemon or lime, juiced
    Lemon or lime wedges for garnish

  • 1 ½ kg of boneless lamb cubed
    2 red onions cut into wedges
    5-6 cups of cooked and chilled basmati rice
    250ml of beef or vegetable stock
    3 tablespoons of pine nuts, toasted
    3 tablespoons of slivered almonds, toasted
    ½ cup each of currants and dried apricots chopped
    ½ cup of fresh mint and coriander
    2 lemons or limes, juiced

Cooking Method

Heat pan to medium add a splash of oil.  Add onion and cook for 1 minute.  Add lamb and Spice Blendz Moroccan Lamb blend spice mix and coat the meat well.  Add stock, reduce heat and cook lamb gently until cooked through.  Add rice and mix well.  Add nuts, currants, apricots, herbs and lemon or lime juice.  Mix well to combine, cook for a few minutes to heat through.

Serving Suggestion – Our Moroccan Lamb blend is complimented with yoghurt, pita bread and lemon or lime wedges.
