  • 500g pork spare rib strips, cut into slices
    1 onion, chopped
    ½ fresh Mango sliced/ tinned / dried mango
    ¼ cup sultanas
    ½ cup chicken stock
    150 ml cooking cream

  • 1 1/2 kg Pork spare rib strips, cut into slices
    2 onions, chopped
    1 fresh Mango sliced/tinned mango/dried mango
    ½ cup sultanas
    1 ½ cups chicken stock
    400 ml cooking cream

Cooking Method

Heat a large saucepan over medium high heat with 1 tablespoon of oil.  Brown pork in batches until golden.  Set aside.  Add the onion to the pan and cook for 6-8 minutes.

Stir in Spice Blendz Pork & Mango spice mix and cook for a further 1 minute before adding mango, sultanas and then add chicken stock.  Bring to a simmer before returning pork to pan.  Cover tightly and simmer over low heat for 1 hour or until pork is tender.  Add cooking cream and adjust salt to taste.  Return pan to a simmer for 1 minute.

Tip – if using dried mango soak in water for 30 minutes before hand.

Serving Suggestion – Our pork and mango is complimented with steamed rice and vegetables.

    I did this recipe in the slow cooker and substituted half the cream for coconut cream and the sultanas for red capsicum. Simple and real tasty with the use of Pork & Mango blendz.

    Just bought the Pork and Mango Mild spice blend from Airlie Beach markets today, to cook dinner for my friend and her husband, who I’m visiting this week. We all loved it, served with potato bake and vegetables! My friends shall be back to the markets for more spices for themselves (and me, bringing them down to Brisbane on visits), and/or I shall be buying online.
