  • 500g chicken pieces
    1 1/2 tablespoons oil
    1 large onion, finely diced
    1 garlic clove, chopped
    2 cm piece of ginger, grated
    1 teaspoon tomato paste
    1/2  teaspoon salt
    3/4 tablespoon white vinegar
    1 1/2 teaspoons soft brown sugar
    4 dried apricots
    1/2 cup of water
    1 small potato
    ½ teaspoon salt
  • oil for frying

  • 1 ½ kg chicken pieces
  • 3 tablespoons oil
  • 2 large onions, finely chopped
  • 1 garlic clove, chopped
  • 4 cm piece ginger, grated
  • 2 tablespoons of tomato paste
  • 1 teaspoon salt
  • 2 tablespoons white vinegar
  • 1 1/2 tablespoons, soft brown sugar
  • 12 dried apricots
  • 1 cup of water
  • 1 large potato
  • 1 teaspoon salt
  • oil for frying

Cooking Method

Heat the oil over a medium heat in a pan and add the onion.  Cook until softened.  Add the garlic, ginger, Spice Blendz Mumbai Chicken spice mix and chicken pieces combine well.

Cook until chicken is browned about 5 minutes.  Add the tomato paste, salt and water.  Bring to the boil.  Reduce the heat and cook until the oil separates from the paste and the chicken is nearly cooked.

Add the vinegar, sugar and chopped, dried apricots to the pan.  Cover and simmer for another 20 minutes.

Grate the potato on the biggest hole on your grater.  Put six cups of water into a dish, add the salt and grated potato.  Stir well.  Remove potato from water and dry on a paper towel.  Heat the oil to medium.  Add small amounts of potato at a time.  Cook until golden brown. Garnish chicken with potato straws.

Serve  –  with steamed rice.
