Content : black peppercorns, chillies, cloves, cinnamon, cumin, coriander & fenugreek
Small – Serves 2
- 500g diced meat, Beef, Pork or Chicken
1 ½ tablespoons clear vinegar
1/3 tablespoon dark vinegar
1 onion, finely sliced
3 garlic cloves, finely sliced
2 cm piece of ginger, finely chopped
2 ripe tomatoes, roughly chopped
100 ml Beef stock or water
1/3 teaspoon jaggery or soft Brown sugar
Large – Serves 6
- 1 ½ kg diced meat, Beef, Pork or Chicken
4 tablespoons clear vinegar
1 tablespoon dark vinegar
2 onions, finely sliced
10 garlic cloves, finely sliced
5 cm piece of ginger, finely chopped
3 ripe tomatoes, roughly chopped
250 ml Beef stock or water
1 teaspoon jaggery or soft Brown sugar
In a large bowl, mix Spice Blendz Vindaloo spice mix with the vinegars. Add the meat and mix thoroughly coat well. Cover and marinate in the fridge for 3 hours or more if possible. Heat the oil over a low heat and fry the onion until browned.
Add the garlic, ginger and tomato. Add the meat, increase the heat to high and fry for 3-5 minutes, or until browned. Add stock or water and any of the marinade left in the bowl, reduce the heat and bring slowly back to the boil.
Add the jaggery or soft brown sugar. Cover tightly and simmer for about 11/2 hours, stirring occasionally until the meat is very tender.
Serving Suggestion – our Vindaloo is complimented with rice, raita or yoghurt and naan bread.
